It is true that fresh fruits, as a whole, are low in caloric value, but the dried fruits rank, in this respect, with the cereal products, giving a total average of about 62 per cent. Raisins, prunes, dates, figs, apricots, and other dried fruit combine well with most other foods, and may be used in a variety of ways in desserts and breakfast foods, making them more palatable and nutritious. Dried prunes, apricots, and peaches, are regarded by nutritionists as definite blood builders.
The juice of the citrus fruits, combined with cherry, grape, or berry juice to give it color, makes one of the most delicious and healthful drinks for summer, and is ideal as a drink at any time of the year in case of fever. When taken for this purpose no other food should be used for a week or more. Both orange and grape juice, taken separately and at intervals of three hours, are effective. Since nuts are the fruit of the tree, they deserve a place among foods of this class, and they also hold a place of honor in respect to their energy value as they stand among the highest in this quality. On the average, 20 percent of protein and 50 percent of fat, with but a small amount of starch, is found in nuts, except the chestnut and the peanut; these are higher in their starch content. It is stated on page 179 of the 1939 Government Year Book of the Department of Agriculture that: “Nuts contain high percentages of proteins which have an adequate assortment of amino acids.” Nut milk. A very wholesome and palatable milk is obtained in some parts of India by shredding fresh coconuts, allowing this to stand under a small amount of boiling water for a few minutes, and then straining through cheesecloth. Blanched almonds and some other varieties of nuts furnish a very acceptable and highly nutritious form of milk, if not overbrowned in baking. The baking of nuts for this purpose, or for making butter,
should be just sufficient to remove the bitter skin covering the kernel.
